Translated by T. A. Layton. The story of wine from its Egyptian and Greek beginnings is followed by an outline of modern methods of vine growing and wine making, showing how such factors as site, soil and climate affect the development of the vine and wine at every stage. The main part of the book deals at length with the wines of France, and includes the history of the great vineyards: Gevrey-Chambertin, Romanee Conti, for example, or the great Bordeaux chateaux - Lafite-Rothschild, Margauz. Over five thousand individual vineyears, chateaux, villages and communes are listed to form a reliable guide both to the great growths and to those lesser wines which are not perhaps so widely appreciated as they might be. No other book has ever assembled together so many facts about French wines: the nature of the soil in each region, the grape varieties planted, the yield of wine, the official classifications of quality for each district, up-to-date vintage guides. The final sections contain much invaluable practical information on wine measures and labels, how to store wine and serve it correctly, the delicate art of good drinking and the harmonious choice of wine and food.
