8vo. 185 x 130 mm., [7 ¼ x 5 inches]. vii, 158 pp. Illustrated with wood engravings throughout the text. Bound in original brown cloth; showing some minor wear to tips and edges, otherwise very good.
This is a revised and expanded edition by Marescalchi of Ottavi's book originally published in 1883. This work includes all the advancements in production techniques that have been made in the industry since the original publication of Ottavi's book. It includes twenty-two chapters beginning with the history of vinegar production through recent legislation governing the industry. It is published as part of a series of entitle, Biblioteca Agraria Ottavi. Marescalchi was the author of a number of books on agriculture and cookery.
