About This Item
An interesting manuscript from the House of Burgundy from the mid-16th century details the functions and responsibilities of each of the servants in charge of attending to the King, known as "Officios de Boca". The functions were from the purchase, storage, control, table, and house service, all under a supervised, strict ritual, and with punishments in case of disobedience. The multiple functions were strategically linked to each other, all orchestrated to serve His Majesty.
With detail some of the foods that were usually part of the King's table, such as wine, cheese, salad, butter, and cream; capers, olives, and mustard; fruit, confit, preserves, and sweet things; bread and pastries; spices, vinegar, sour grapes, sauces, and sugar.
The Royal House of Felipe II, being a prince, was served in the Castilian way. In the Royal House of Felipe II, the offices of "camarero mayor" and "escribano" (used in the House of Castilla), and they passed to the house of Burgundy as "sommelier de corps" and "grefier", which are described among other "officios de boca" in this document.
